Ingredients
- Ladyfinger cookies
- Fresh espresso
- Mascarpone cheese
- Heavy cream

- Unsweetened cocoa powder
Instructions
- Brew 1 cup of strong espresso and let it cool slightly. Optionally, mix in a splash of rum.
- In a mixing bowl, whip 1 cup of heavy cream until soft peaks form.
- In another bowl, combine 1 cup of mascarpone cheese with ½ cup of sugar, then fold in the whipped cream until smooth.
- Briefly dip ladyfingers in the cooled espresso mixture and layer them in your serving dish.
- Spread half of the mascarpone mixture over the ladyfingers evenly, then repeat with another layer of dipped ladyfingers and top with the remaining mascarpone mix.
- Cover and chill in the refrigerator for at least 4 hours or overnight.
