Ingredients

  • Ladyfinger cookies
  • Fresh espresso
  • Mascarpone cheese
  • Heavy cream
  • Sugar
  • Unsweetened cocoa powder

Instructions

  1. Brew 1 cup of strong espresso and let it cool slightly. Optionally, mix in a splash of rum.
  2. In a mixing bowl, whip 1 cup of heavy cream until soft peaks form.
  3. In another bowl, combine 1 cup of mascarpone cheese with ½ cup of sugar, then fold in the whipped cream until smooth.
  4. Briefly dip ladyfingers in the cooled espresso mixture and layer them in your serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers evenly, then repeat with another layer of dipped ladyfingers and top with the remaining mascarpone mix.
  6. Cover and chill in the refrigerator for at least 4 hours or overnight.
