- 2 lbs sweet potatoes, cubed

- 2 tbsp maple syrup
- 1 tsp ground cinnamon
- 1 tsp salt
- ½ tsp black pepper
- Fresh herbs (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and peel the sweet potatoes if desired; cut them into uniform bite-sized cubes.
- In a large bowl, toss the sweet potato cubes with olive oil, maple syrup, cinnamon, salt, and pepper until evenly coated.
- Spread the seasoned sweet potatoes on the prepared baking sheet in a single layer.
- Roast for 25-30 minutes or until fork-tender and slightly caramelized, stirring halfway through for even cooking.
- Remove from the oven and garnish with fresh herbs if using. Serve warm.
