Ingredients
- 8 oz pasta (spaghetti or penne)
- 1 cup sun-dried tomatoes packed in oil, chopped
- ½ cup fresh basil leaves, torn
- 4 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente (about 8-10 minutes). Reserve ½ cup of pasta water before draining.
- In a skillet over medium heat, combine olive oil and minced garlic. Sauté until fragrant (about 1 minute).
- Stir in the chopped sun-dried tomatoes along with their oil; heat for another 2 minutes.
- Add the drained pasta to the skillet, mixing well with the sauce. If needed, add reserved pasta water to loosen.
- Remove from heat and stir in fresh basil and grated Parmesan until combined.
- Serve hot, garnished with additional Parmesan if desired.
