- 1.5 cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1/2 cup sour cream
- 2 tsp pure vanilla extract
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
- 2 medium ripe peaches, sliced
Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl. Press mixture firmly into the bottom of a springform pan. Bake for 10 minutes until golden brown.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix until combined.
- Pour filling over the baked crust and spread evenly. Bake for 45-50 minutes until set but slightly wobbly in the center.
- Cool at room temperature before refrigerating for at least 4 hours or overnight.
- Top with fresh berries and peach slices before serving.
