- 4 medium bell peppers (red, green, or yellow)
- 1 cup halal cheese (mozzarella or cheddar)
- 1 lb ground meat (beef, turkey, or chicken)
- 1 cup cooked rice (white or brown)
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 onion, chopped
- 2 cloves garlic, minced
- ¼ cup fresh cilantro or parsley, chopped
- ½ cup tomato sauce
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Slice the tops off the bell peppers and remove seeds. Place them upright in the dish.
- In a skillet over medium heat, sauté onions until translucent; add minced garlic and cook for another minute.
- In a mixing bowl, combine cooked rice, browned ground meat, sautéed onion and garlic, spices, herbs, and half of the halal cheese.
- Stuff each pepper generously with the filling and top with remaining cheese.
- Cover with foil and bake for about 30 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly.
