  • 4 medium bell peppers (red, green, or yellow)
  • 1 cup halal cheese (mozzarella or cheddar)
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup cooked rice (white or brown)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • ¼ cup fresh cilantro or parsley, chopped
  • ½ cup tomato sauce

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Slice the tops off the bell peppers and remove seeds. Place them upright in the dish.
  3. In a skillet over medium heat, sauté onions until translucent; add minced garlic and cook for another minute.
  4. In a mixing bowl, combine cooked rice, browned ground meat, sautéed onion and garlic, spices, herbs, and half of the halal cheese.
  5. Stuff each pepper generously with the filling and top with remaining cheese.
  6. Cover with foil and bake for about 30 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly.
