Ingredients

  • 2 cups fresh strawberries (hulled and halved)
  • 1 cup plain Greek yogurt
  • 23 tbsp honey or maple syrup (to taste)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Instructions

  1. Rinse and hull the strawberries, then cut them into halves or quarters.
  2. In a blender, combine strawberries, yogurt, honey or maple syrup, vanilla extract, and lemon juice. Blend until smooth but slightly chunky.
  3. Taste the mixture and adjust sweetness if needed.
  4. Pour the mixture into popsicle molds, leaving some space at the top.
  5. Insert sticks and freeze for at least 4 hours until solid.
  6. To release pops easily, run warm water over the outside of the molds.
