Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press this mixture into the bottom of a springform pan and bake for about 10 minutes until golden brown. Allow to cool.
  2. In another bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix until fully incorporated.
  3. Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake for 50-60 minutes until the edges are set but the center jiggles slightly.
  4. Leave the cheesecake in the oven with the door ajar for an hour to cool gradually. Then chill in the fridge for at least four hours or overnight.
  5. Before serving, top with sliced strawberries and dollops of whipped cream.
