- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ½ cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 cups fresh strawberries, sliced
- 1 cup whipped cream (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press this mixture into the bottom of a springform pan and bake for about 10 minutes until golden brown. Allow to cool.
- In another bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix until fully incorporated.
- Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake for 50-60 minutes until the edges are set but the center jiggles slightly.
- Leave the cheesecake in the oven with the door ajar for an hour to cool gradually. Then chill in the fridge for at least four hours or overnight.
- Before serving, top with sliced strawberries and dollops of whipped cream.
