Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
- Mix in lemon juice and egg until well combined.
- In another bowl, whisk together flour, baking powder, and salt. Gradually fold into wet mixture until just combined.
- Gently mix in chopped strawberries.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes until edges are golden but centers remain soft. Cool briefly before transferring to wire racks and dusting with powdered sugar.
