Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
- Beat in the egg and vanilla extract until well combined.
- Mix in the softened cream cheese until smooth.
- In another bowl, whisk together the flour and baking powder; gradually add this dry mixture to the wet ingredients.
- Gently fold in the chopped strawberries to keep them intact.
- Drop spoonfuls of dough onto prepared baking sheets, spacing them apart.
- Bake for 12-15 minutes or until edges turn golden brown. Allow cooling slightly before transferring to wire racks.
