- 1 lb flank or sirloin steak
- 1 cup long-grain rice
- 1 cup queso cheese sauce
- 1 cup bell peppers (mixed colors), chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
Instructions
- Wash and chop the bell peppers and onion into bite-sized pieces.
- Season the steak with salt and pepper. Heat oil in a skillet over medium-high heat and sear the steak for 3-4 minutes on each side until cooked to your liking. Remove from skillet and let rest.
- In the same skillet, sauté onions and bell peppers until tender (about 5 minutes). Add minced garlic and cook for an additional minute.
- Cook long-grain rice according to package instructions until fluffy.
- Slice the rested steak against the grain. In a large bowl, combine cooked rice, sautéed veggies, queso sauce, and sliced steak until well mixed.
- Serve warm, garnished with fresh herbs if desired.
