- 4 ears fresh corn on the cob
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cayenne pepper (adjust to taste)
- 2 tablespoons freshly squeezed lime juice

- 2 tablespoons chopped cilantro (optional)
Instructions
- Preheat grill to medium-high heat (about 400°F/200°C). Shuck corn and brush lightly with olive oil.
- In a small bowl, mix chili powder, cayenne pepper, and salt. Sprinkle evenly over the corn.
- Grill corn for about 10-12 minutes, turning occasionally until charred and tender.
- Remove from grill, cool slightly, and slice off kernels using a sharp knife.
- Toss kernels in a bowl with lime juice and cilantro if desired. Serve immediately.
