- 5–7 lbs beef brisket
- 2 tbsp coarse kosher salt
- 1 tbsp freshly ground black pepper
- 2 tbsp smoked paprika
- 1/4 cup brown sugar
- 1 tbsp garlic powder
- 2 cups BBQ sauce (store-bought or homemade)
Instructions
- Trim excess fat from the brisket and rinse it under cold water. Pat dry with paper towels.
- Generously season the brisket with salt, pepper, smoked paprika, and brown sugar. Cover with plastic wrap and refrigerate for at least 1 hour or overnight.
- Preheat your grill to medium-high heat (300°F).
- Sear the brisket on the hot side of the grill for about 4-5 minutes per side until browned.
- Move the brisket to the cooler side of the grill, cover with foil or lid, and cook low and slow for 4-6 hours until fork-tender (internal temperature of about 195°F).
- In the last hour, brush on BBQ sauce generously to caramelize before serving.
