- 1 cup ground pork belly
- 1/2 cup chicken stock (or homemade)
- 1 tbsp grated ginger
- 1 tbsp grated garlic
- 2 tbsp soy sauce (low-sodium)
- 1 tsp sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- 1. Prepare the Dough: Mix flour and warm water in a bowl until a shaggy dough forms. Cover with a damp cloth and let it rest for 30 minutes.
- 2. Create the Filling: In another bowl, combine ground pork, ginger, garlic, soy sauce, sesame oil, green onions, salt, and pepper until well mixed.
- 3. Make Broth Gelatin: Simmer chicken stock until reduced by half, cool slightly, pour into ice cube trays, and freeze overnight.
- 4. Assemble Dumplings: Roll out dough into thin circles. Place one tablespoon of filling and one frozen broth cube in each circle; pleat and seal tightly.
- 5. Steam Dumplings: Place dumplings in a bamboo steamer lined with parchment paper. Steam over boiling water for 8-10 minutes until the wrappers are translucent.
- 6. Serve: Enjoy hot with soy sauce mixed with vinegar and chili oil for dipping.
