- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 medium yellow onion, chopped
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup long-grain white or brown rice
- 3 tbsp butter
- 2 tsp smoked paprika
- Salt and black pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Heat a skillet over medium-high heat and melt butter.
- Sear chicken for 5-6 minutes per side until golden brown. Remove from skillet.
- In the same skillet, sauté onions and garlic until translucent (about 3-4 minutes).
- Pour in chicken broth, scraping up bits from the pan. Stir in heavy cream and smoked paprika; simmer for 5 minutes.
- Return chicken to the skillet, spoon sauce over it, cover, and let simmer for 20 minutes until cooked through.
- Cook rice according to package instructions while chicken simmers. Serve with creamy chicken on top.
