Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 bell peppers, chopped into bite-sized pieces (any color)
- 3 cloves garlic, minced
- 3 tbsp olive oil
- Juice of 1 lemon
- 2 tbsp fresh parsley or cilantro, chopped
- Salt and pepper to taste
Instructions
- In a bowl, combine olive oil, minced garlic, lemon juice, chopped herbs, salt, and pepper. Let the marinade sit for 10 minutes.
- Rinse shrimp under cold water and pat dry. Add shrimp and bell peppers to the marinade; toss to coat and let marinate for 30 minutes.
- Thread shrimp and bell peppers onto skewers, leaving space between each piece.
- Preheat grill to medium-high heat (375°F/190°C). Grill skewers for about 4-5 minutes per side until shrimp are pink and opaque.
