Instructions
- Pat the scallops dry with paper towels and season both sides generously with Cajun spice.
- Heat olive oil in a skillet over medium-high heat until shimmering. Add butter and melt until bubbly.
- Place the scallops in the skillet without overcrowding; sear for 2-3 minutes per side until golden brown and opaque.
- Remove from heat, squeeze lemon juice over the scallops, and transfer to plates.
- Serve immediately, drizzling with pan juices and garnishing with fresh herbs if desired.
