- 4 tbsp ghee or oil
- 2 medium starchy potatoes (about 1 cup mashed)
- 1 cup green peas (fresh or frozen)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- ½ tsp garam masala
- 1 tsp salt (to taste)
- 1 tbsp lemon juice
- Fresh cilantro (optional)
Instructions
- Prepare the Dough: In a large bowl, combine flour, ghee, and salt until crumbly. Gradually add water to form a smooth dough. Cover with a damp cloth and let rest for 30 minutes.
- Cook the Filling: Boil potatoes until fork-tender, then mash in a bowl. Mix in green peas, cumin, coriander, garam masala, salt, and lemon juice.
- Shape the Samosas: Roll dough into small circles, cut each in half to form cones. Fill each cone with the potato mixture and seal edges with water.
- Fry: Heat oil in a deep pan over medium heat. Fry samosas until golden brown and crispy—about 5–7 minutes per batch. Drain on paper towels.
- Serve: Arrange on a platter and serve hot with mint chutney or tamarind sauce.
