- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced (assorted colors)
- 1/2 cup red onion, thinly sliced
- 1/2 cup mayonnaise (light if preferred)
- 2 tbsp Dijon mustard
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp Italian seasoning
Instructions
- Cook the rotini pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
- In a bowl, whisk together mayonnaise, Dijon mustard, lemon juice, and Italian seasoning until smooth.
- In a large mixing bowl, combine cooled pasta with chopped veggies. Drizzle dressing over the mixture and toss gently until well coated.
- Cover with plastic wrap and refrigerate for at least 30 minutes before serving to enhance flavors.
