- 4 pita breads
- 1 cup bell peppers, chopped
- 1 cup zucchini, chopped
- 1 cup carrots, chopped
- 2 tablespoons extra virgin olive oil
- 1 cup hummus
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Preheat the oven to 425°F (220°C).
- Toss chopped bell peppers, zucchini, and carrots in olive oil, salt, and pepper.
- Spread veggies on a baking sheet and roast for 20-25 minutes until tender.
- Warm pita bread in the oven for about 5 minutes.
- Fill each pita pocket with roasted vegetables and hummus.
- Drizzle lemon juice over the filled pockets before serving.
