- 8 oz pasta (fettuccine or penne)
- 1 cup roasted red peppers (jarred or homemade)
- 1 cup heavy cream
- 3 cloves garlic (minced)
- 1/2 cup Parmesan cheese (freshly grated)
- 1/4 cup fresh basil (chopped)
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Cook the pasta in boiling salted water until al dente (about 8-10 minutes). Drain and set aside.
- In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1-2 minutes).
- Stir in roasted red peppers and cook for another minute.
- Pour in heavy cream and let simmer for 3-5 minutes until slightly thickened.
- Add freshly grated Parmesan cheese, salt, and pepper; stir until melted and creamy.
- Toss the cooked pasta in the sauce until well coated. Top with chopped basil before serving.
