- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/3 cup cocoa powder
- 1 tbsp gel food coloring
- 1 cup all-purpose flour (sifted)
- 2 large eggs
- 8 oz cream cheese (full-fat)
- 1 tsp vanilla extract
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a mixing bowl, beat together melted butter and granulated sugar until well combined. Add cocoa powder and mix until smooth.
- Stir in gel food coloring until the batter is deep crimson, then add eggs one at a time, mixing well after each addition.
- Fold in sifted all-purpose flour until just combined; do not overmix.
- In another bowl, beat cream cheese until smooth, then gradually add powdered sugar and vanilla extract until creamy.
- Pour half of the brownie batter into the prepared pan. Spread the cream cheese mixture evenly over it, then top with remaining brownie batter. Swirl gently with a knife.
- Bake for 25-30 minutes or until edges are set but center is slightly soft; a toothpick should come out with moist crumbs.
- Let cool completely before slicing into squares.
