  • 8 oz cream cheese (full-fat)
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a mixing bowl, beat together melted butter and granulated sugar until well combined. Add cocoa powder and mix until smooth.
  3. Stir in gel food coloring until the batter is deep crimson, then add eggs one at a time, mixing well after each addition.
  4. Fold in sifted all-purpose flour until just combined; do not overmix.
  5. In another bowl, beat cream cheese until smooth, then gradually add powdered sugar and vanilla extract until creamy.
  6. Pour half of the brownie batter into the prepared pan. Spread the cream cheese mixture evenly over it, then top with remaining brownie batter. Swirl gently with a knife.
  7. Bake for 25-30 minutes or until edges are set but center is slightly soft; a toothpick should come out with moist crumbs.
  8. Let cool completely before slicing into squares.
