- 2 boneless chicken breasts (1 lb), diced
- 8 oz fettuccine pasta
- 2 fresh jalapeños, sliced (adjust for heat preference)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tsp Cajun seasoning
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare the ingredients: Dice chicken, chop jalapeños (wear gloves), and mince garlic.
- Cook the fettuccine: Boil salted water, add fettuccine, and cook until al dente. Reserve ½ cup pasta water before draining.
- Sauté the chicken: Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (6-8 minutes).
- Create the sauce: Add garlic and jalapeños to the skillet; cook for 2 minutes. Pour in heavy cream and stir well. Gradually mix in Parmesan until melted.
- Combine: Add drained fettuccine to the skillet; toss gently. If too thick, add reserved pasta water one tablespoon at a time.
- Serve: Plate the pasta and garnish with additional Cajun seasoning or fresh herbs if desired.
