- ½ cup unsalted butter (softened)
- 2 tbsp heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with colorful liners.
- In a bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, then mix in milk and vanilla extract.
- In another bowl, whisk together flour and baking powder. Gradually combine with wet ingredients until just mixed.
- Divide the batter into separate bowls and add gel food coloring to each for vibrant layers.
- Layer colored batter into cupcake liners, filling about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean. Allow them to cool completely before frosting.
- To make frosting, beat softened butter until creamy, then gradually add powdered sugar alternating with heavy cream until smooth.
- Frost cooled cupcakes generously and decorate with sprinkles if desired.
