- 1 cup pumpkin puree
- 1 ½ cups all-purpose flour

- ½ tsp baking soda
- 1 tsp cinnamon
- 1 tsp pumpkin spice
- 2 large eggs (room temperature)
- ⅓ cup vegetable oil
- ¼ cup milk (whole or any type)
- 8 oz cream cheese (softened)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, pumpkin spice, and salt until combined.
- In another bowl, mix pumpkin puree, eggs, vegetable oil, and milk until smooth.
- In a small bowl, beat softened cream cheese with a bit of sugar until fluffy for the filling.
- Combine wet ingredients into dry ingredients gently; do not overmix.
- Fill each muffin cup two-thirds full with batter. Add a tablespoon of cream cheese filling in the center and top with remaining batter.
- Bake for 18-20 minutes or until a toothpick comes out clean from the edges.
- Allow cooling before serving.
