- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup creamy peanut butter
- ¾ cup granulated sugar
- 1 tsp pure vanilla extract
- ½ cup sour cream
- 3 large eggs, room temperature
Instructions
- Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs with melted butter until combined. Press mixture into the bottom of a springform pan.
- Bake crust for 10 minutes until golden brown. Let cool.
- In a large bowl, beat softened cream cheese until smooth. Add peanut butter and sugar; mix until fluffy.
- Incorporate vanilla extract and sour cream. Add eggs one at a time, mixing just until combined.
- Pour filling over cooled crust and bake for 50-60 minutes until set but slightly jiggly in center.
- Cool at room temperature before refrigerating for at least four hours or overnight.
