- 3–4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups fresh spinach
- 4 cups low-sodium chicken broth
- 4 garlic cloves, minced
- 2 tbsp lemon juice
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat.
- Sear the chicken for 5-6 minutes per side until golden brown; remove and let rest.
- In the same skillet, sauté minced garlic until fragrant (about 30 seconds).
- Add rinsed orzo and chicken broth; bring to a boil then reduce to a simmer for 10-12 minutes until orzo is tender.
- Stir in fresh spinach until wilted, then slice the rested chicken and return it to the skillet along with lemon juice and Parmesan cheese. Mix gently.
