- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1/4 cup honey
- 1/4 cup BBQ sauce
- 3 cloves fresh garlic, minced
- 2 tsp olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat a large skillet over medium heat and add olive oil. Season chicken breasts with salt and pepper.
- Sear the chicken in the skillet for 5-7 minutes per side until golden brown. Remove from the pan temporarily.
- In the same skillet, sauté minced garlic until fragrant, then stir in honey and BBQ sauce until combined.
- Add washed rice and chicken broth to the pan, nestling the seared chicken back in.
- Cover and simmer for 20-25 minutes or until rice is tender and liquid is absorbed.
- Fluff rice with a fork before serving, garnishing with chopped green onions.
