- 4 large eggs
- 1/2 cup bell peppers (chopped)
- 1/4 cup onion (chopped)
- 1 cup fresh spinach
- 1/2 cup cheese (cheddar or feta)
- Salt and pepper to taste
- 1 tsp olive oil
Instructions
- Whisk the eggs in a bowl with salt and pepper until frothy.
- Chop bell peppers, onion, and spinach into bite-sized pieces.
- Heat olive oil in a nonstick skillet over medium heat.
- Sauté bell peppers and onion for about 3 minutes until softened.
- Add spinach and cook for another minute until wilted.
- Pour whisked eggs over the veggies evenly.
- Once edges begin to set (about 2 minutes), sprinkle cheese on one half.
- Fold the omelet in half and cook for an additional minute until cheese melts.
- Serve hot and enjoy!
