  • 1/2 cup granulated sugar

  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup grated carrots (about 1 medium carrot)
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1 cup powdered sugar
  • 1 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a donut pan.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the eggs and mix in oil and vanilla extract. Fold in grated carrots.
  4. Combine wet ingredients into dry ingredients and stir until just mixed.
  5. Fill each donut cavity three-quarters full with batter.
  6. Bake for 10–12 minutes until golden brown. Cool in the pan for five minutes before transferring to a wire rack.
  7. For frosting, beat cream cheese and butter until smooth; add powdered sugar and milk until desired consistency is achieved. Frost cooled donuts generously.
