- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup grated carrots (about 1 medium carrot)
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1 cup powdered sugar
- 1 tbsp milk
Instructions
- Preheat oven to 350°F (175°C) and grease a donut pan.
- In a mixing bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat the eggs and mix in oil and vanilla extract. Fold in grated carrots.
- Combine wet ingredients into dry ingredients and stir until just mixed.
- Fill each donut cavity three-quarters full with batter.
- Bake for 10–12 minutes until golden brown. Cool in the pan for five minutes before transferring to a wire rack.
- For frosting, beat cream cheese and butter until smooth; add powdered sugar and milk until desired consistency is achieved. Frost cooled donuts generously.
