- 2 tsp Cajun seasoning
- 2 bay leaves
- 4 cups low-sodium chicken broth
- 2 cups white rice
Instructions
- Sauté onions, bell pepper, and celery in a large pot over medium heat until softened.
- Add minced garlic and sliced sausage; cook until sausage is browned.
- Stir in Cajun seasoning and bay leaves; mix well.
- Add soaked red beans and chicken broth; bring to a gentle boil, then reduce heat to low.
- Cover and simmer for 1 to 1.5 hours until beans are tender, stirring occasionally.
- Remove bay leaves and serve over hot white rice.
