- 4 boneless, skinless chicken breasts (1.5 lbs)
- 1 cup freshly grated Parmesan cheese
- 1 cup Italian seasoned breadcrumbs
- 2 tsp garlic powder
- 2 tbsp olive oil
- 1 cup heavy cream
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt, pepper, and garlic powder on both sides.
- In a bowl, mix the breadcrumbs and Parmesan cheese. In another bowl, place the olive oil.
- Coat each chicken breast first in olive oil, then in the breadcrumb mixture.
- Place the coated chicken in the baking dish and bake for 25-30 minutes until golden brown.
- While baking, heat heavy cream in a saucepan over medium heat with salt and pepper until simmering; stir in chopped parsley.
- Serve the baked chicken drizzled with creamy sauce.
