- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 28 oz can crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 2 tsp Italian seasoning
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley for garnish
Instructions
- In a large pot over medium heat, add a splash of olive oil and sauté chopped onions until translucent (about 5 minutes).
- Push the onions aside and add the ground beef; cook until browned while breaking it up.
- Stir in minced garlic and cook for another 30 seconds, then add crushed tomatoes and broth.
- Season with Italian seasoning, salt, and pepper; let simmer on low heat for about 15 minutes.
- Add broken lasagna noodles; cook according to package instructions (about 10 minutes) until al dente.
- In a separate bowl, mix ricotta with herbs. Stir this mixture and shredded mozzarella into the soup just before serving.
