- 1 cup medium cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 tbsp sugar
- 1 tsp salt
- 1 cup whole milk (or plant-based alternative)
- 2 large eggs
- 1/2 tsp cayenne pepper (adjust to taste)
- 1/2 cup diced jalapeños (seeds removed for less heat)
Instructions
- Preheat oven to 400°F (200°C) and grease a cast-iron skillet or baking dish.
- In a large bowl, mix cornmeal, flour, baking powder, sugar, salt, cayenne pepper, and diced jalapeños.
- In another bowl, whisk together milk and eggs until smooth; then pour into the dry mixture. Stir gently until just combined.
- Pour the batter into the prepared skillet and spread evenly.
- Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Let cool slightly before slicing and serve warm with butter.
