- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter (softened)
- 1 large egg
- 1 1/4 cups all-purpose flour
- 1 tsp baking soda
- Pinch of salt
- 1 tsp vanilla extract
- 1 cup powdered sugar (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together softened butter, granulated sugar, brown sugar, and peanut butter until light and fluffy (about 3 minutes).
- Beat in the egg and vanilla extract until smooth.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
- Scoop rounded balls of dough onto prepared baking sheets, spacing them about two inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
- While cookies cool on a wire rack, mix powdered sugar with additional peanut butter to create the filling.
- Once cooled completely, spread the filling between two cookie halves.
