  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, brown sugar, and peanut butter until light and fluffy (about 3 minutes).
  3. Beat in the egg and vanilla extract until smooth.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
  5. Scoop rounded balls of dough onto prepared baking sheets, spacing them about two inches apart. Bake for 10-12 minutes until edges are golden but centers remain soft.
  6. While cookies cool on a wire rack, mix powdered sugar with additional peanut butter to create the filling.
  7. Once cooled completely, spread the filling between two cookie halves.
