- 2 cups fresh apples (peeled and diced, preferably Granny Smith)
- 1 tsp pure vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, sugar, cinnamon, and salt.
- In another bowl, beat eggs; then add milk and vanilla extract. Mix until smooth.
- Combine wet ingredients with dry ingredients until just mixed; gently fold in diced apples.
- Drop spoonfuls of batter onto the prepared baking sheet, leaving space between each fritter.
- Bake for 15-20 minutes or until golden brown. Cool slightly before serving.
