- 4 fresh hatch chilis, chopped
- 1 medium sweet onion, diced
- 3 cloves garlic, minced
- 1 lb lean ground beef or turkey
- 4 cups low-sodium chicken or vegetable broth
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime
- 2 tbsp olive oil
Instructions
- Rinse hatch chilis and remove stems and seeds according to your heat preference.
- In a large skillet, heat olive oil over medium heat. Sauté onions until golden brown (about 5 minutes).
- Stir in minced garlic and ground meat; cook until browned (7-10 minutes).
- Add chopped hatch chilis and broth. Bring to a gentle simmer for 20 minutes.
- Stir in cilantro and lime juice before serving hot with rice or crusty bread.
