- 4 bone-in or boneless lamb chops (about 1 inch thick)
- 4 cloves fresh garlic, minced
- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh thyme, finely chopped
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Finely chop the rosemary and thyme.
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub this marinade generously onto both sides of the lamb chops.
- Let the lamb marinate for at least 30 minutes at room temperature.
- Heat a large skillet over medium-high heat until hot. Add a splash of olive oil.
- Sear the marinated lamb chops for about 3-4 minutes on each side until golden brown.
- Reduce heat to medium-low and cook for an additional few minutes until they reach an internal temperature of 145°F (63°C) for medium-rare.
- Remove from heat and let rest for a few minutes before serving.
