- 1 lb boneless chicken thighs
- 1 cup fresh pineapple, diced
- 1 cup bell peppers, sliced
- 2 green onions, chopped
- 3 cloves garlic, minced
- ½ cup teriyaki sauce
- 1 tbsp sesame seeds (optional)
- ¼ cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
Instructions
- Chop chicken into bite-sized pieces and slice bell peppers.
- In a bowl, marinate chicken with teriyaki sauce, garlic, and brown sugar for at least 15 minutes.
- Heat oil in a skillet over medium heat. Sauté marinated chicken until golden brown (about 5-7 minutes).
- Remove chicken and add pineapple and bell peppers to the skillet; sauté for 3-4 minutes.
- In the same pan, combine soy sauce, rice vinegar, and brown sugar over low heat.
- Return chicken to the pan, coating everything evenly with the sauce.
- Serve garnished with green onions and sesame seeds.
