- 1 large ciabatta bread loaf
- 1 medium zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, thinly sliced
- 8 oz fresh mozzarella cheese, sliced
- 2 tbsp balsamic glaze
- 2 tbsp olive oil (for grilling)
- Salt and pepper to taste
Instructions
- Preheat your grill or grill pan over medium-high heat and brush lightly with olive oil.
- Slice the zucchini, bell peppers, and red onion into even pieces for uniform grilling.
- Grill the vegetables for about 4-5 minutes per side until tender and charred.
- Assemble the panini by layering grilled veggies and mozzarella on one slice of ciabatta. Drizzle with balsamic glaze and top with another slice.
- Grill the assembled sandwich for 3-4 minutes per side until golden brown.
- Slice in half diagonally and serve hot.
