- 1 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper to taste
- ½ cup mayonnaise
- 1 tbsp sriracha sauce (adjust for spice level)
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic (minced, optional)
Instructions
- Wash and peel the sweet potatoes, then cut them into 1-inch thick wedges.
- In a mixing bowl, toss the sweet potato wedges with olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper until well coated.
- Preheat your grill to medium-high heat (about 400°F/200°C).
- Grill the wedges in a single layer for about 15-20 minutes total, flipping halfway through until tender and charred.
- While grilling, whisk together mayonnaise, sriracha sauce, lemon juice, Dijon mustard, and minced garlic in a small bowl until smooth.
- Serve hot with spicy aioli for dipping.
