  • Total Time: 50 minutes
  • Yield: Serves 4 (2 tacos each) 1x

Ingredients

Scale
  • 1 lb flank steak
  • 2 ears corn on the cob
  • 1/2 cup mayonnaise
  • 2 tsp chili powder
  • 2 tbsp lime juice (freshly squeezed)
  • 1/4 cup fresh cilantro (chopped)
  • 8 corn tortillas

Instructions

  1. Marinate the flank steak in lime juice, chili powder, salt, and pepper for at least 30 minutes.
  2. Preheat the grill to medium-high heat and grill the marinated steak for 6-8 minutes on each side until cooked to your desired doneness.
  3. Husk the corn and soak it in water for 10 minutes before placing it on the grill; cook for 10-15 minutes until charred.
  4. Mix mayonnaise with lime juice, chili powder, and cilantro to create the elote sauce.
  5. Slice the grilled steak thinly against the grain. Warm tortillas on the grill or stovetop.
