Instructions
- Marinate the flank steak in lime juice, chili powder, salt, and pepper for at least 30 minutes.
- Preheat the grill to medium-high heat and grill the marinated steak for 6-8 minutes on each side until cooked to your desired doneness.
- Husk the corn and soak it in water for 10 minutes before placing it on the grill; cook for 10-15 minutes until charred.
- Mix mayonnaise with lime juice, chili powder, and cilantro to create the elote sauce.
- Slice the grilled steak thinly against the grain. Warm tortillas on the grill or stovetop.
- Assemble tacos by topping tortillas with steak slices, grilled corn kernels, and drizzling with elote sauce.
- Serve warm with extra cilantro and lime wedges.
