- 1 lb boneless, skinless chicken breasts (about 3–4 breasts)
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 medium zucchini, sliced into thick rounds
- 1 medium red onion, cut into wedges
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 tbsp low-sodium soy sauce
- 2 tbsp freshly squeezed lemon juice
- Skewers (wooden or metal)
Instructions
- In a large bowl, whisk together olive oil, garlic powder, smoked paprika, soy sauce, and lemon juice.
- Cut the chicken breasts into 1-inch cubes and add them to the marinade. Let marinate for at least 30 minutes.
- While the chicken marinates, prepare the vegetables by cutting them into bite-sized pieces.
- Thread the marinated chicken and vegetables onto skewers alternately.
- Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
- Grill the skewers for about 10-15 minutes until the chicken is cooked through and veggies are tender.
