- 1 lb boneless, skinless chicken breasts (about 3–4 breasts)
- 1 cup fresh pineapple chunks
- 1 red bell pepper, cut into bite-sized pieces
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 2 tbsp honey
- 4 garlic cloves, minced
- 2 tbsp lime juice
- 2 tbsp olive oil
Instructions
- In a bowl, whisk together soy sauce, honey, minced garlic, lime juice, and olive oil.
- Cut chicken into 1-inch cubes; add to the marinade for at least 30 minutes in the fridge.
- Thread marinated chicken, pineapple chunks, red bell pepper pieces, and green onions onto skewers.
- Preheat grill to medium-high heat (400°F/200°C).
- Grill skewers for about 10-12 minutes, turning occasionally until chicken is cooked through.
