Instructions
- 1. Activate the yeast: In a small bowl, combine warm water and active dry yeast. Let it sit until bubbly (about 5-10 minutes).
- 2. Mix dry ingredients: In a large bowl, whisk together flour, salt, and pepper.
- 3. Combine wet ingredients: Create a well in the center of the flour mixture. Pour in the activated yeast and olive oil; stir until just combined.
- 4. Knead the dough: Transfer to a floured surface and knead for 5-7 minutes until smooth.
- 5. Add flavor: Fold in chopped garlic and rosemary until evenly distributed.
- 6. First rise: Place dough in an oiled bowl, cover it, and let it rise in a warm spot for about 1 hour or until doubled in size.
- 7. Shape muffins: Preheat oven to 400°F (200°C). Punch down dough, divide into portions, and shape into muffins.
- 8. Bake: Arrange on a parchment-lined baking sheet. Brush tops with olive oil and bake for 15-20 minutes until golden brown.
