- 4 bone-in chicken thighs (about 1.5 lbs)
- 1 lb baby potatoes, halved
- 6 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 2 tsp dried Italian herbs
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Pat the chicken thighs dry; season with salt, pepper, and half of the Italian herbs.
- Toss halved baby potatoes in olive oil, salt, pepper, and remaining herbs until coated.
- In a bowl, whisk together minced garlic, heavy cream, grated Parmesan cheese, salt, pepper, and additional herbs.
- Place seasoned chicken in the baking dish; arrange potatoes around them. Pour creamy sauce over everything.
- Bake for 45-50 minutes or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are tender.
