- 1 lb steak tips (sirloin or ribeye)
- 4 cloves fresh garlic (minced)
- 4 tbsp unsalted butter
- 8 oz rigatoni pasta
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp fresh parsley (chopped)
Instructions
- Prepare the ingredients: Chop steak tips into bite-sized pieces and mince the garlic.
- Cook the rigatoni: Boil salted water in a large pot, add rigatoni, and cook until al dente (10-12 minutes). Reserve 1/2 cup pasta water before draining.
- Sauté the steak: In a skillet over medium-high heat, melt half the butter, season steak tips with salt and pepper, and sear until browned (5-7 minutes).
- Make the garlic butter sauce: Reduce heat to medium-low, add minced garlic to the skillet, stir for one minute, then add remaining butter until melted.
- Combine pasta and sauce: Add drained rigatoni to the skillet with steak and garlic butter; pour in heavy cream gradually while tossing. Use reserved pasta water if needed for consistency.
- Finish with cheese: Sprinkle Parmesan cheese over the mixture on low heat and toss until melted. Serve hot with extra garlic butter if desired.
