- 1 lb ribeye steak
- 1 lb baby potatoes
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 2 sprigs fresh rosemary or thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes. Toss them with olive oil, salt, pepper, and chopped herbs. Spread on a baking sheet.
- Roast the potatoes for 25-30 minutes until golden brown.
- Heat a skillet over medium-high heat with olive oil. Season the steak with salt and pepper, then sear for about 4-5 minutes per side for desired doneness.
- In a saucepan, melt butter over low heat. Add minced garlic; simmer until fragrant.
- Serve the steak alongside crispy potatoes drizzled with garlic butter sauce.
