- 6 large eggs
- 1 cup diced bell peppers
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In an oven-safe skillet, heat olive oil over medium heat. Add diced bell peppers and sauté until soft, about 5 minutes.
- In a bowl, whisk together the eggs, salt, pepper, and parsley until frothy.
- Pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle feta cheese on top.
- Transfer the skillet to the oven and bake for 20-25 minutes until set and golden brown.
- Cool slightly before slicing into wedges. Serve warm or at room temperature.
