Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté bell peppers until tender.
- In a large bowl, whisk eggs until frothy, then mix in cottage cheese.
- Fold in sautéed vegetables, salt, pepper, and dried herbs.
- Pour the mixture into a greased baking dish and spread evenly.
- Bake for 30–35 minutes or until golden brown on top.
