Ingredients
- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 2 tsp Italian seasoning
- 3 tbsp extra virgin olive oil
- 1 can (14.5 oz) diced tomatoes, undrained
- ½ cup grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
- In a bowl, whisk together olive oil, minced garlic, and Italian seasoning.
- Marinate the chicken breasts in the mixture for at least 30 minutes in a zip-top bag or shallow dish.
- Place the marinated chicken in the prepared baking dish and pour the canned diced tomatoes over it.
- Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Serve hot, garnished with fresh Parmesan cheese.
